Breakfast Quiche
Elevate breakfast to the next level with this simple but luxurious breakfast quiche. The buttery crust packed with smoky bacon and creamy cheese is sure to please. This quiche pairs well with fruit or a nice spinach salad if serving for brunch.

Serves 8
For the Crust:
2 cups all-purpose flour
1 tsp salt
¾ cup chilled butter flavored Crisco shortening
4 to 8 tbsp ice cold water
For the filling:
4 eggs
1 ½ cup half and half
1 tbsp butter
6 slices cooked and crumbled bacon
½ small onion finely chopped
2 cups finely shredded mozzarella cheese
¼ tsp dry mustard
½ tsp salt
½ tsp nutmeg
½ tsp cayenne (you can eliminate if you don’t like spice)

Blend the flour and salt in a large bowl. Cut the shortening into the flour mixture using a pastry blender or a fork until small pea size crumbles form
Stir in the chilled water with a fork just enough that the dough holds together
Wrap in plastic wrap and refrigerate for 30 minutes
making the quiche
Preheat oven to 425 degrees
After the crust has chilled, roll out crust into a disc shape and place on pie dish
Melt the butter and sauté the onions until soft
Begin layering the onion, bacon and cheese using half at a time
Mix the eggs, half and half and seasonings into a ‘custard’
Pour the ‘custard’ over the layered meat and cheese mixture
Bake in a preheated oven for 15 minutes
Turn down the oven to 350 degrees and bake for an additional 35-40 minutes — until a knife inserted in the center comes out clean
Let the quiche cool for 10 minutes and then serve with fruit or salad
